Somewhat like what we do in our kitchen, it is important for me to develop cocktails that have a sense of place, that are connected to our terroir and our traditions. When I think towards creating a new recipe I look first towards unique regional ingredients including fruits, vegetables and herbs as well as mixes that I can create and transform right here such as bitters, cordials, house marinated cherries or birch syrop made at Manoir Hovey. There’s nothing better than a refreshing cocktail that embraces the best of everything that is local and delicious!
