Discovery Menu

For adventurous diners, we propose trying our chef’s Discovery Menu, which changes seasonally and showcases the most exquisite ingredients. This special tasting menu and includes an amuse-bouche, two appetizers, one main course, one cheese course, dessert and mignardises. Its price varies according to the ingredients included in the dishes. You may also to have each course paired with a wine carefully chosen by our sommelier at an additional cost. Regular Dinner Menu

Dinner includes an amuse-bouche followed
by 3 consecutive courses and mignardises at the end.
The base price is fixed at $65 per
person, not including tax and service.

This three course dinner menu (including the service)
is included for houseguests on the Modified American Plan.
Only items marked with an asterisk (*) have an extra charge.

Appetizers


Gnocchi garlic snails, parsley pesto, tomato

Tuna tartar with Foie Gras , palmer mango, mashed avocado

Crisp veal sweetbreads, celeriac, bacon mayonnaise

Cream of mushroom, brown beech mushroom, drizzle of white truffle oil

Grilled Quebec lamb, humus, cilantro, grapefruit

Ravioli stuffed with shredded confit of duck,
brussel sprouts, smoked duck, gizzards

Beets, granny smith apple, lemon, chevre noir

 Mixed greens with pistachio vinaigrette, watermelon, Mascarpone cheese

Roasted foie gras from the Canardière farm,
grapes watercress, walnut, wild grape caramel...(*) $12.00

Cauliflower risotto, shaved black truffles, beurre noisette… (*) $18.00


Main Courses

Filet mignon of beef,
potato terrine, fried onion pearls, wild mushroom sauce

Loin of milk-fed veal, creamed basmati rice with arugula,
raw and sautéed radishes

Seared duck breast from the la Canardière farm,
its gizzards confit with wild ginger, kumquat, mandarine, clementine

Roasted chicken breast
Butterscotch reduction, burnt tomato quinoa, white asparagus and pancetta

Lake St-Pierre willeyed pike,
its roe, coulis of leek greens, “risotto” of cauliflower,  iodized blanc manger

Yellowfin tuna, broth of herbs from our gardens,
Swiss chard, chanterelles … (*) $5,00

Québec lamb served pink, sweet pepper broth,
artichoke fricassée, eggplant purée … (*) $5,00

Loin of caribou, couscous, vegetable ragout, Foie gras “taboulé” … (*) $7,00

English Breakfast : Mélange de feuille de thé Keemun et Ceylon
English Breakfast : Brisk, full-bodied blend of bright Keemun leaves with sweet Ceylon

Smoked Black Teas

Lapsang Suchong : celebrated black tea from Fujian province in China, smoked with pine needles


British Columbia Forest Tea : B.C. alderwood-smoked China Yunnan tea.

Spring Harvest Darjeeling : the « champagne » of black teas with a complex muscatel flavour and floral nose (*) $2.75 extra


Scented Black Teas

Mad Hatter Teaparty : flowery Ceylonese black tea from Sri Lanka blended with passion fruit, pomegranate and vanilla. Great with decadent desserts!


Estate Oolongs

Imperial Oolong : Semi-fermented tea blend from mountain estates in China and Taiwan producing delicate, flowery aroma


Estate Green Teas

Floral Jasmine Green Tea : A delicate & fragant Chinese green tea made from golden jasmine blossoms

Genmai Cha : Japan’s famous popcorn green tea with toasted rice & barley in green tea

Organic Peppermint Leaves : invigorating and refreshing
